Garbanzo Bean Burgers
• 1 15-ounce can garbanzo beans, drained but not rinsed
• 1 1/3 cups rolled oats
• 1 cup water
• 1/2 small onion, minced
• 1/4 cup finely chopped mushrooms
• 1/4 teaspoon garlic powder
• 1/4 teaspoon ground cumin
• 1/8 teaspoon cayenne pepper or paprika to taste
• 1 1/2 tablespoons soy sauce
• Olive oil for sauteing
• 6 slices Cheddar cheese for dairy
1. Mince beans in processor and add remaining ingredients. Let stand 15 minutes until water is absorbed *(this took longer than 15 mins for me - closer to an hour)*. Shape into 6 burgers.
2. Heat oil in large skillet and saute burgers until golden brown on both sides. Top with cheese.
