I love food! I mean, who doesn't right? I love experimenting with food almost as much as I love eating it. I want to share my recipes and experiences with others who might want to try out something new with me. Enjoy! :)

About Me:
My name is Heather. I'm 25 years old and still living at home in New Hampshire with my parents. I'm an independent contractor, and I mainly do promotional events throughout the New England area. I am also involved with promoting local and national artists and on occasion I'll get the chance to travel on the road with them. Photography and Cooking are big hobbies of mine, and my blog is my stomping ground to share them both. I hope you'll stick around for awhile, I've got a lot to share!

Tofu, Lettuce & Tomato (TLT) Sandwich

This can be easily veganized!

1 Tablespoon Dijon Mustard

1 Tablespoon Reduced Sodium Soy Sauce

1 Teaspoon Adobo Sauce (from canned chipotle peppers) - Divided

1 Package extra firm tofu (drained & rinsed)

8 Slices of Toasted Whole Wheat Bread (obviously you dont need to use this exact amount, depending on how many sandwiches you are making)

Lettuce

2 medium tomatoes - sliced

Preheat oven to 475. Coat baking sheet with cooking spray.

Combine mustard, soy sauce and 1/2 tsp of adobo sauce in a small bowl. Slice tofu crosswise into eight 1/2 inch thick pieces. Pat dry with a paper towel and place on baking sheet. Using a spoon, spread half the mustard mix on one side of the tofu. Turn the slices over and spread the remaining mix on the other side.

Bake the tofu for 20 minutes.

Combine Mayonnaise with the remaining 1/2 tsp adobo sauce in a small bowl. Spread the mix on the toasted bread. Divide the tofu, lettuce, tomato among 4 slices of toast and top with the remaining toast to make 4 sandwiches. Cut in half and serve.
